Application of nitrogen in wine and other beverages
Long time exposure to oxygen will cause wine or beverage to turn into vinegar,
which is caused by oxygen converting ethanol in wine into acetic acid.
Winemakers use nitrogen at several points in the brewing process to
prevent this oxidation.

Blowing on bottles, inerting BRIGHT tanks for brewing, or providing nitrogen blankets for bottled or kegged beverages will reduce the amount of oxygen in the atmosphere and eliminate the concern of oxygen coming into contact with the product. Nitrogen will also keep the beverage line clean, dry and inert.
